Thank you so much for your lovely message! 😊 I totally get that baking is a bit of a science sometimes! For the egg substitute, you could try using flaxseed eggs (1 tbsp ground flaxseed + 3 tbsp water per egg) or applesauce (To replace 1 egg, use about ¼ cup (60 ml) of unsweetened applesauce. and if you want to keep the cake from being too moist, you can add ½ teaspoon of baking powder to balance out the texture.— both work really well for this kind of moist cake. And I love that your niece and nephew are getting excited about baking, that’s so sweet 🧡 Hope you’ll give this version a try with the butternut too!

Thank you for this wonderful fall warming recipe and slice of life. (pun intended). My sister grew more than she could store butternut squash and this would be the perfect recipe if I only knew how to substitute the eggs as her family includes vegetarians and vegans. The frosting is easy to modify but baking is more of a science. My sister loves butternut squash but the shelf life is limited. My sister’s family has been eating wonderful carrot cakes every week now and my niece and nephew have become excited to bake.
