I don't understand these stories, either. My wife is a teacher, and makes pretty decent money. I used to be one, and starting pay was poor where I was, but you quickly made a solid amount by the time you had a Master's. In nearly every state, teachers average over $50K, which isn't a ton, but not bad... plenty to make moonlighting delivering pizza a bad career move. More expensive states offer more money: New York averages $89K... which isn't great if you live in Manhattan, but not the sort of poverty implied by these stories. Mississippi is the lowest at $45K, but that's still a third of the median home price.
