A lot of The Sixth Sense was building up to the infamous Wham Line; while The Silence of the Lambs was all about the character interaction.

Which director is more influential?
I personally love Kubrick and as for pushing the bounds of what was possible or acceptable in cinema he contributed a lot, and much can be said of his contributions. Still, Hitchcock was not only more prolific. In doing so, he gave many new and solidifying rising talent. Tippi Hedren, Joan Fontaine, Grace Kelly, Martin Landau, Madelaine Carrol, Bruce Dern and others all either started with Hitchcock or gained prominence after start in a Hitchcock film. Hitchcock also pioneered the use or created innovative techniques such as a Dolly Zoom, POV shots, creating suspense letting the audience know more than the characters, disorienting cinematography in scenes like in Psycho, he used cameos, and the MacHuffin plot device. With his movies and Alfred Hitchcock Presents he was one of the few directors to become a household name.
What makes for a better movie?
Realistic looking CGI is horrifically expensive. So the movie would is full of whatever shít the budget would allow (fake explosions, fire, and water are especially awful; but I have seen car and train crashes that are not even physically viable). I have a ton of respect for Christopher Nolan for sticking with practical effects.
