Summer alfresco cooking is one of the best parts of the season. If you like the smoky, hands-on feel of coals over gas, the best charcoal barbecues can really shape your outdoor cooking. But with everything from portable barbecues to drum-style models available, it’s not always clear where to start.
Danny Carruthers, head chef at Sebb’s in Glasgow (a popular restaurant where the food is cooked over fire), says flexibility should be prioritised when choosing a barbecue, adding that being able to create indirect heat is important in the cooking process. He looks for “space to move food to one side or cooking across different levels,” and says a griddle attachment can help “you keep so much more of the flavour and juices.”
