This week, during the 2025 Michelin awards in Glasgow, there was a surreal moment: of the 22 new one-star restaurants announced for the UK and Ireland, only one was led by a female chef.
As the chefs of those 22 restaurants filed off the stage, the host, Amanda Stretton, turned to Gwendal Poullennec, the international director of the Michelin Guides, and said: “Before we get on to announcing the green stars, I know there is one subject that is actually quite close to your heart: the emergence and the recognition of female talent.”
