What the sensor on your wrist is actually doing
A sleep tracker does not watch your brain. It watches your body. The accelerometer detects movement, the optical heart-rate sensor measures pulse intervals, and the algorithm behind those two signals infers which sleep stage you are probably in. That inference is the product, not a recording of neural activity, not a reading of brain waves, not anything a neurologist would call a measurement of sleep architecture.
